CakeBoss Coconut Cake

The human race has a love/hate relationship with coconut, doesn’t it? You either love it or you hate it. I’m a lover. Coconut is wonderful, and it’s especially wonderful when it’s used in a sweet dessert like this easy cake mix cake.

I love this recipe because it’s so versatile as far as flavor profiles. You can fill it with so many different fruit fillings — think of the possibilities! Lemon curd, pineapple filling, mango filling, passion fruit filling, lime curd, raspberry filling — and on and on. The cake is moist and flavorful and comes together in a jiffy. If you have a food processor, consider giving your shredded coconut a few whirrs with the chopping blade to make the pieces less stringy. It will make the cake smoother and more attractive when it’s being eaten (nobody likes to see stringy things hanging off a fork).

Easy CakeBoss Coconut Cake with Cake Mix

Ingredients

  • 1 box white cake mix We like Pillsbury or Betty Crocker
  • 1 box instant coconut pudding small (3.4 oz)
  • 4 eggs
  • 1⅓ cups water
  • ½ cup vegetable oil
  • 1 cup sweetened, shredded coconut

Instructions

  • Preheat oven to 325 F.
  • Grease and flour two 8" round pans.
  • Optional - in your food processor, whirr the coconut a few time so that the pieces are smaller and not quite so stringy.
  • Combine all ingredients in large mixing bowl.
  • Mix or stir for 1-2 minutes until well combined.
  • Pour into prepared pans and bake for 30-40 minutes, or until toothpick inserted in center comes out clean.
  • Let cool completely on wire racks.
  • Assemble with desired filling and frost with CakeBoss Buttercream or your favorite frosting.
  • (optional) Before frosting crusts, pat outside with shredded coconut (toast if you want to give it a little crunch and color). 

Notes

If you don't have or can't find coconut pudding mix, use a box of vanilla or french vanilla pudding + 1 tsp coconut extract.
